with acidity of Oleic acid being less than 0.2%

As per IOOC ( International Olive Oil Council ), Extra-virgin olive oil contains less than 0.8% acidity, and is judged to have a superior taste. Unfiltered fresh olive oil has a slightly cloudy appearance in the beginning and later on you see a sediment. This form of olive oil is popular only amongst small scale producers. It is in line with consumer's demand for more ecological and less-processed "green" products. Extra Virgin olive oil accounts for less than 10% of oil in many producing countries.
